Angel Foodie Friday Recipe: Roasted Herb Chicken
The Project Angel Food kitchen staff is sharing another classic recipe from our renowned chefs: our very own roasted herb chicken. Each week Project Angel Food uses 2,000 lbs. of chicken as we feed 2,400 people a day. This dish is an absolute must-have for clients, and a staple to have in your recipe repertoire. And like every meal out of the Project Angel Food kitchen, it’s packed with protein and flavor!

Recipe: Roasted Herb Chicken
Serves 4
Ingredients:
5 Split Chicken Breasts
1 tsp Fresh Rosemary
1 tsp Fresh Thyme
1 tsp Fresh Sage
1 tsp Fresh Basil
3 tbsp Olive Oil
1 tsp Minced Garlic
2 tbsp Lemon Juice
½ tbsp Salt
½ tbsp Pepper
Directions:
1. Combine garlic, olive oil, lemon juice, herbs, salt and pepper into a marinade
2. Pour marinade over the chicken
3. Marinate overnight in the refrigerator
4. Place chicken on sprayed sheet pans and roast@375 degrees until the internal temperature of the chicken reads 170 degrees
Serve over steamed veggies, rice, or potatoes. Most importantly, enjoy!
